Plant Based Lemon Pesto Caprese

With the recent record-breaking summer temperatures, weekend bbq's are a must! Heirloom tomatoes are popping in up in all of the grocery stores, so we thought we'd take advantage, and make one of everyones favorite summertime salads - Caprese. 

However, we're switching it up a bit and making it entirely plant-based. That means no mozzarella...but don't worry...you won't even miss it! We replace the cheese with out Lemon Pesto Everything Spread. Its creamy, its lemony...its downright delish!


Plant Based Lemon Pesto Caprese:

Heirloom tomatoes, sliced 

Lemon Pesto Everything Spread

Fresh basil

Balsamic vinegar

Olive oil or Avocado Oil

Salt & Pepper



Scatter heirloom tomatoes evenly around a large platter. Top each tomatoes with slices of avocado and a dollop of the Lemon Pesto Spread. Salt and Pepper to taste. Scatter basil leaves on top and Drizzle with Balsamic and oil.
