Its just one of those nights...you work late, you're tired, and you don't have the energy to fuss over dinner. If you find yourself with some fresh veggies in the fridge, the easiest solution to a healthy fast dinner is our Everything Spreads. They taste great without having to worry about any added oils, gluten, soy, legumes, or dairy.
So here we go - the simplest roasted broccolini spiced up with our Spicy Cilantro Everything Spread (though you could use your personal favorite!)
Roasted Spicy Cilantro Broccolini
Preheat oven to 425°. Place broccolini on a greased baking pan. Drizzle with avocado oil and salt and toss to coat.
Bake, uncovered, 10-15 minutes or until tender, stirring occasionally.
Meanwhile, blend 2 tbsp of Spicy Cilantro Everything Spread with 2 tbsp water (add more or less depending on desired thickness). Stir together until well blended. Pour spicy cilantro sauce over broccolini & enjoy!
