Vegan Southwest Breakfast Burrito

Try our Spicy Cilantro Everything Spread in a breakfast burrito to add a kick to your regular morning routine. Here’s a recipe for a vegan breakfast burrito that is as filling as it is yummy!

Yields 1 burrito

Ingredients:

Salt and pepper

Olive oil

1 tortilla

1 tablespoon Spicy Cilantro Everything Spread

2 tablespoons of black beans

1 potato  

2 tablespoons Soyrizo

Half a green bell pepper

Half a white onion

Recipe:

  1. Cut the potato into small cubes and add into a skillet with olive oil over medium heat.. Season with salt and pepper. Let the potatoes steam by covering the pan with a lid for 10 minutes. Remove the lid and fry them for another 10 minutes until they are golden brown and crispy on the sides.

  2. Chop the bell pepper and onion and stir fry over medium heat in a little bit of olive oil. Cook until the onions are browned and the bell peppers start to soften. Season with salt and pepper and set aside

  3. To assemble the breakfast burrito, start with spreading a tablespoon of Spicy Cilantro Everything Spread on a tortilla, then pile with beans, potato, soyrizo and the bell pepper and onion mixture

  4. Wrap the burrito and if desired, toast the outside by toasting all sides of the burrito in a pan over the stove.
